Check out this savory recipe for roasted Brussels sprouts that includes rosemary, cranberries, pecans, and pepitas. Brussels are loaded with antioxidants and vitamin C and they provide healthy, plant-based protein!
Cranberries are packed with plenty of vitamins and antioxidants as well and have lots of health-boosting benefits. Pepitas (which are actually pumpkin seeds that don't require shelling) contain fiber, iron, zinc, magnesium, and copper, while pecans are considered a quality source of protein with 19 vitamins and minerals and heart-healthy fat.
Ingredients
- 1 lb. Brussels sprouts, halved (remove ends)
- 2 sprigs rosemary
- 1/3 cup pecans
- 1/4 cup peptitas
- 1 cup cranberries
- Olive oil
- Salt and pepper to taste
Directions
- Preheat oven to 350 degrees (Tip: use the convection oven for crispier results).
- Toss Brussels in olive oil, chopped rosemary and salt and pepper and spread out evenly onto a cookie sheet.
- Roast for 30 minutes, then add cranberries and nuts.
- Toss again and roast for another 20-30 minutes until Brussels are golden and turning crispy.
- Remove from the oven and serve hot!
